Six weeknight dinners for October
It gets dark early and you want something warm on the table by seven. Here's a week of it, with one shopping trip and a soup you can make on Sunday.

October is a good month to cook on a weeknight. Squash and apples are cheap and everywhere, kale gets sweeter after the first cold nights, and you start wanting soup again. These six dinners take thirty to fifty minutes each, and most of them use one pot or one pan.
They're in an order that makes the shopping easy. The onions you chop on Sunday cover Monday and Tuesday, Thursday's soup is already made, and Friday is tacos, because it's Friday.
Monday: Zuppa Toscana
Sausage, potatoes and kale in a creamy broth. Slice the potatoes thin so they cook fast, and add the kale right at the end so it stays bright. Hot Italian sausage brings most of the seasoning, so taste before you add more salt.

Tuesday: Weeknight Dal
Red lentils cook down to something creamy in twenty minutes with no soaking. While they simmer, fry cumin seeds, onion, garlic and ginger in a skillet, then stir it all through at the end. A squeeze of lemon finishes it. If there's a bag of spinach going soft in the fridge, this is where it goes.
Weeknight Dal
Red lentils cooked soft with cumin, ginger and tomato. A pantry dinner in forty minutes.
Wednesday: Sheet Pan Maple Dijon Salmon
Everything on one pan in fifteen minutes. The glaze is maple, Dijon and tamari, and it catches at the edges in a hot oven. Asparagus is out of season now, so use green beans or broccoli. They take the same time.
Sheet Pan Maple Dijon Salmon
Salmon brushed with maple, Dijon and tamari, roasted on one pan with a green vegetable.
Thursday: Butternut Squash Soup
Roast the squash until it's browned at the edges, because that's where the flavor is, then blend it smooth with stock. The brown butter and crisp sage on top take three minutes and turn a plain soup into dinner. If you made it on Sunday, tonight is ten minutes of work.
Butternut Squash Soup with Brown Butter Sage
Roasted squash blended smooth, with brown butter and crisp sage spooned over the top.
Friday: Crispy Beef Tacos
Fold seasoned beef into corn tortillas and fry them in a skillet until they're crisp and golden. It's messier than a taco kit and much better. Put out the lettuce, cheese and pico and let everyone build their own.

Seasoned beef folded into corn tortillas and fried in a skillet until crisp.
Saturday: Shakshuka
Eggs poached in a spiced tomato and pepper sauce, brought to the table in the pan. It's usually breakfast, but it makes a good late, lazy dinner with warm pita and whatever is left of the feta.

An hour on Sunday
- Roast and blend the squash soup. Leave the brown butter for Thursday.
- Strip and wash the kale for Monday, roll it in a clean towel and keep it in the fridge.
- Chop two onions for Monday and Tuesday. They keep for three days in a sealed container.
- Rinse the lentils and measure out the spices for the dal, so Tuesday is one pot and one skillet.
Kuzina can put the whole week on your calendar and write the shopping list for it, minus what's already in your pantry. Or print this page and stick it on the fridge. That works too.
