Warm blistered cherry tomatoes and their garlicky oil spooned over cold burrata.

20 min · Serves 6 · Italian

Ingredients

  • 2 balls (8 oz each) burrata
  • 1 1/2 lb cherry tomatoes, mixed colors
  • 1/4 cup extra virgin olive oil
  • 2 cloves garlic, thinly sliced
  • 1/4 tsp red pepper flakes
  • 1 handful basil leaves
  • flaky sea salt
  • 6 slices sourdough, grilled, to serve

Method

  1. Take the burrata out of the fridge 30 minutes ahead so it isn't cold in the middle.
  2. Heat the oil in a large skillet over medium-high heat. Add the tomatoes in one layer and leave them until they blister and a few burst, 5 to 6 minutes, shaking the pan now and then.
  3. Add the garlic and pepper flakes for the last minute, then take off the heat and season with salt.
  4. Set the burrata on a platter, spoon the warm tomatoes and their oil around and over it, and tear the basil on top. Finish with flaky salt and serve with the grilled bread.
